🥘 Swamp Potatoes Indian Style – Masala Fried Potatoes with a Desi Twist
Craving something spicy, crispy, and easy to cook? This Indian-style Swamp Potatoes recipe is full of flavor and goes perfectly with roti or rice. Great for quick dinners or lunchboxes!
🧂 Ingredients:
- Potatoes – 2 (peeled and thinly sliced in round chips-style pieces)
- Onion – 1 large (sliced thin and long)
- Spring onion – a small handful (chopped)
- Garlic – 4-5 cloves (finely chopped)
- Ginger – 1 small piece (finely chopped)
- Capsicum (Bell pepper) – 1 large (sliced thin and long, like in chow mein)
- Oil – as needed
- Salt – to taste
- Garam masala – ½ tsp
- (Optional) Turmeric – ¼ tsp
👩🍳 Method:
- Peel and slice the potatoes into thin round pieces.
- Heat oil in a pan and fry the potatoes until they are golden and crispy. Remove and keep aside.
- In the same pan, add 2 spoons of oil. Add sliced onion and sauté until golden brown.
- Now add garlic, ginger, and chopped spring onion. Stir and cook for a minute.
- Add capsicum and sauté lightly for 1–2 minutes (don’t overcook, keep it a little crunchy).
- Add garam masala, salt, and turmeric (if using). Mix well.
- Now add the fried potatoes and mix everything properly. Cover the pan and cook on low heat for 5–10 minutes so that the flavors blend well.
- Turn off the heat and garnish with fresh coriander (optional).

- Serve hot with roti, paratha, or plain rice.
