My Mother-in-Law's Traditional Mutton Masala Recipe

Ingredients for Mutton Masala (1 kg mutton):
1 kg mutton (washed and cleaned)
1 kg onions (finely chopped)
4 dried red chilies
2 bay leaves (tej patta)
4 whole garlic cloves (lightly crushed)
Whole garam masala (black cardamom, cloves, cinnamon)
1 tablespoon cumin seeds (jeera)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
Mustard oil (as needed)
2 tablespoons pure desi ghee (for finishing)
Optional: A pinch of readymade mutton masala

How to Make Mutton Masala – Step-by-Step Recipe
Step 1: Heat the Mustard Oil
Heat mustard oil in a pressure cooker until it slightly smokes. This removes its raw smell and adds a rich rustic flavor.
Step 2: Add Whole Spices
Add cumin seeds, bay leaves, dried red chilies, garlic cloves, and whole garam masala. Let them sizzle for a few seconds.
Step 3: Add Mutton and Onions
Now add the cleaned mutton and chopped onions. Mix in turmeric powder, red chili powder, and salt.
Step 4: Cook the Masala
Sauté everything well until the onions turn golden and the masala starts to coat the mutton evenly. (You may add a pinch of readymade mutton masala here for a deeper flavor.)
Step 5: Pressure Cook on Low Flame
