2-Minute Rawa Uttapam – Healthy & Tasty Indian Breakfast

📝 Ingredients:
- 1 cup semolina (rava/sooji)
- 1 finely chopped onion
- 1 finely chopped capsicum (bell pepper)
- 1 grated carrot
- 2 chopped green chilies
- 1 chopped tomato
- Fresh coriander (chopped)
- ½ cup curd (yogurt)
- 1 sachet of Eno (fruit salt)
- Salt to taste
🌶️ For Tempering (Tadka):
- 1 tsp mustard seeds
- A few curry leaves
- 1 whole dry red chili
- 1 tsp cooking oil (mustard oil preferred)
👩🍳 Method:
- In a mixing bowl, combine semolina, chopped vegetables, curd, coriander, green chilies, and salt.
- Add water as needed to make a smooth batter.
- Add Eno and mix gently.
- Prepare tempering: Heat oil, add mustard seeds, curry leaves, and red chili. Let it splutter carefully.
- Add the hot tempering to the batter and mix.
- Heat a non-stick pan, grease lightly, and pour a ladleful of batter. Spread like a pancake.
- Cover and cook on medium heat. Flip to cook both sides until golden brown.
- Serve hot with chutney or ketchup!
